Now, to make this betutu chicken, you don't need to spend a lot of money, the ingredients for making betutu chicken are very simple and of course you can prepare all the following ingredients. Now, prepare 500 grams of chicken and clean the chicken, lime leaves, salt, sugar, pepper, cayenne pepper, kenkur, ginger, galangal, shrimp paste, red chillies, relish, lemongrass stalks, chillies, coriander leaves, shallots and finally garlic. . . After you have prepared the following spices and ingredients, now let's start the first step.

In the first stage, now we first prepare the rough spices, separating all the previous spices. First separate coarse spices ie 10 shallots, 4 cloves of garlic, ginger, galangal, kenkur, 2 stalks of lemon grass, 10 curly red chillies and lastly 10 red chillies.

In the second stage, after you prepare the coarse masala, now we prepare the fine masala. Fine spices include a tablespoon of black pepper, 1 teaspoon of coriander, shrimp paste to taste, 2 fingers of turmeric, 2 cloves and 10 curled red chilies. Now, after the soil and coarse spices are prepared, let's start the next step.

Third stage, after preparing all the spices, now prepare a blender and grind all the spices using a blender. After finishing grinding all the spices using a blender, now transfer all the spices in a bowl.

Step four, after you have pureed all the spices using a blender, grind half of the spices you prepared earlier. Do not spend too much time in the blender for coarse spices, because what we need is only half refined and not smooth.

Fifth stage, after you grind both the fine and coarse spices, now prepare a frying pan and pour all the pureed spices using a blender. Cook the spices on low heat until cooked and fragrant.

Sixth stage, after you have boiled the spices until they are cooked and smell good, now pour all the coarse spices that you have half mixed and add the lime leaves that you have cut into a few pieces. Cook the two spices again and till boiling.

Seventh stage, after you have cooked the masala and smell the fragrance, now add 500 gms of chicken which has been cleaned first. You can also substitute chicken with duck as per taste. Then stir the spices again until the chicken is evenly coated with the spices.

8th step, after mixing the chicken well with the spices, now add other spices like 2 tbsp sugar, 1 tsp salt, to taste and also pepper. Stir the betutu sauce again until all the spices just added are well mixed.

Ninth stage, after you feel that the chicken is thoroughly mixed with the spices and has a very strong aroma, add enough mineral water to the pan. At this stage, you can choose not to add water, as people have different tastes, I prefer gravy over dry. After you've added enough water, cover the pot and let it sit for a few minutes until the gravy dries up a bit.

At the final stage, after you cover the pot for a few minutes, the broth will be a little drier than before, this is a sign that you can serve the betutu chicken to your family and friends.
