Actually, the original mentai sauce uses mentaiko or tobiko, but since these two ingredients are hard to find, I will make my own version of mentai sauce using several sauces. Now the ingredients to make dimsum mentai sauce are 500g chicken, 1 egg, salt, granulated sugar, tapioca flour, scallion, carrot, dimsum skin, garlic, soy sauce, bon nori, pepper, seasonings, oyster sauce . , spicy mayonnaise and finally plain mayonnaise. After you have prepared all the ingredients, now let's start the first step.

The first step that you need to do first is to clean the 500 grams of chicken that you have prepared. Make sure there is no blood left afterwards for maximum results. After cleaning all the chicken, cut the chicken into small pieces for easy blending later.

In the second stage, after you prepare the chicken, now we prepare 1 carrot and grate until the carrot is cooked, then cut the green onion and garlic into small pieces.

Third step, after you prepare the chicken meat and other ingredients, now prepare a blender and in the blender cook 500 grams of chicken meat, 1 egg, 1 teaspoon of salt, 1 tablespoon of sugar, spices to taste, pepper to taste, chopped garlic, 1 tablespoon oyster sauce, 1 tablespoon sweet soy sauce. After putting all the spices in the blender, puree everything with the blender until completely smooth.

So, as you can see in the photo above, all the chicken meat and spices are really smooth because they are mixed. If you want the texture of the chicken to be not too smooth, you can use a semi-coarse blender to make the texture of the chicken more coarse.

Step 4: After mashing the chicken using a blender, now add 8 tablespoons of tapioca flour to the mashed chicken mixture, then add all the grated carrots and green onions cut into small pieces. Then stir until everything is evenly mixed.

Fifth stage, after stirring until everything is well mixed, now we put the stuffing on your discarded dimsum skin. Fill the dimsum skin with enough chicken meat as shown in the photo above. Repeat this step until all the chicken meat and dimsum skin are used.

So, you can see the photo above, all the dimsums are ready and ready to add mentai sauce on top of the dimsums, I made 16 dimsums for me and my family. Now let's make the mentai sauce in the next step.

Step Six, To make the mentai sauce, all you need to prepare is a bowl, regular mayonnaise sauce, spicy mayonnaise sauce, chili sauce, and bon nori. As I mentioned earlier, you can also add mentaiko or tobiko like the original mentai sauce.

Seventh stage, when all the spices are prepared, now put all the sauces according to taste in the bowl as shown in the picture above. Then stir everything until the sauce is evenly mixed.

Step eight, after you prepare the mentai sauce, now put enough mentai sauce on top of each of the dimsums you prepared earlier. Using a torch, the process is different from the one I'm going to make now. First you need to steam all the dimsum, then add the mentai sauce and you can use a torch after you put the mentai sauce on top of the dimsum.

Last stage, after putting all the mentai sauce into the dimsum, now prepare the steamer and put all the dimsum into the steamer. Then steam for about 20 minutes using medium heat. Be sure to turn off the steamer and cover with a cloth.

Finally, after waiting 20 minutes in the steamer, now you can eat dim sum with your friends and family.
